
I’ve got more zucchini than I can possibly use and have already given away some. I remembered a recipe I got from my cousin a few years ago and decided to try making Zucchini Bites. These things were easy to make and tasted so good dipped in marinara (i.e. spaghetti sauce from a jar.) Will be making these again.

This went into the fridge this morning. It is “watermelon tuna” that will marinate for two to twelve hours, then either breaded and fried or eaten in other ways. The ingredients are all spicy. The green sliced things are one of the peppers (Beaver Dam variety) from the garden, that I learned get spicier the bigger they get.

a small bowl of fresh strawberries. This is the most ripe ones I’ve seen on the plants at one time. Some others had to be tossed because bugs/birds got to them. These I put into a fresh salad with creamy balsamic vinaigrette dressing.

A dragon fruit I bought at the store. I’ve never eaten dragon fruit before. Any tips from those who have would be much appreciated.

African violet given to me a few months ago that has since been repotted and is thriving. No I won’t be eating it. The ripe (Mortgage Lifter variety) tomatoes from the plants so far. When I get enough, I’ll blanch them and make a salsa or something from them. In the ramekin in the bottom right corner are the arnica seeds I’ve been collecting from the plants. There will be plenty to donate to the library seed bank.

That’s one reason I never grow zucchini. Everyone who grows it has more than they can handle. Strawberries in August? Amazing. Strawberries here bear once, in June. That’s part of what makes them special. Blink and you miss them.

These are everbearing. I will grate and freeze the zucchini I don’t eat and use it for zucchini bread. I bought one packet of seeds but only used 5 seeds; donated the rest to the library.

I rather like these cooking adventures. Your zucchini bites look great. Dragon fruit can be tasty if it’s fresh enough. I’ve only had it once and I simply sliced it in half and scooped out the flesh. I hope to one day taste it truly fresh in the country it’s grown because my first experience which was exported proved underwhelming. fingers crossed that the one you have there tastes/tasted great. 🤞😊

Yes it is! And the pepper and tomato plants are covered with fruit. (Afraid to look at the zucchini as it’s been a few days and they must be huge by now.)

I remember when my brother was overrun with Jerusalem artichokes. Gardening is a learning by doing process.

Sadje, thank you, I plan on it. I just finished eating the watermelon “tuna.” It was very tasty (never pan-fried watermelon before!) but did not taste like tuna.

It was batter fried, the same one used in chicken Maryland. Tastes nice.

That all looks good…I love strawberries but I can’t eat many because of the tiny seeds. I want to try dragon fruit…
